Easy Roasted Mushrooms

Ingredients

  • 2 pounds button or cremini mushrooms, washed, trimmed, and quartered
  • 1/4 cup extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 8 to 12 sprigs thyme or rosemary
  • 2 tablespoons chopped parsley, chives, tarragon, or other fresh herbs

Directions

Set a rack in the middle of the oven and heat it to 375 degrees F (190 degrees C). Coat the mushrooms with the olive oil, then sprinkle with salt and pepper. Move them onto a foil-lined rimmed baking sheet and arrange them in a level layer. Lay the thyme or rosemary sprigs over the mushrooms. Slide the pan into the oven and roast until the mushrooms have given off their liquid, about 15 minutes. Carefully pour that liquid into a separate container and save it for another use, since it makes a terrific vegan seasoning sauce. Put the mushrooms back in the oven and keep roasting until they are browned but still tender, about 30 minutes longer. Remove and discard the thyme or rosemary. Scoop the mushrooms into a bowl and toss with parsley, chives, or tarragon. Serve immediately.
