Ingredients
- 2 Tbsp cooking oil
- 1 small onion
- 1 clove garlic
- 2 cups long grain white rice
- 1/2 Tbsp chili powder
- 1/2 tsp cumin
- 1/4 tsp oregano
- 3 cups water
- 1 tsp salt
- 2 green onions, sliced
Directions
- Chop the onion finely and mince the garlic. Put the onion, garlic, and cooking oil into a medium sauce pot. Cook over medium heat, stirring now and then, until the onion is soft and translucent.
- Add the uncooked rice, chili powder, cumin, and oregano to the pot. Keep stirring and cooking for about 2 minutes, so the rice and spices get lightly toasted; you’ll hear the rice start to crackle a bit.
- Pour in the water, add the salt, and stir everything briefly. Cover the pot, raise the heat to medium-high, and let it come to a boil. Once it reaches a full boil, lower the heat to low, or just above low, and let the rice simmer for 15 minutes.
- After 15 minutes, take the pot off the heat and leave it covered for 10 minutes. When that 10 minutes is up, gently fluff the rice with a fork. Scatter the sliced green onions over the top right before serving.
