Prep 20 min · Makes 6 servings

Ingredients
- 7-8 cups bite-sized broccoli flowerets
- 1/2 cup thinly sliced red onion
- 1/2 cup chopped mint leaves
- 1/2 cup chopped peanuts
- 3 T fresh-squeezed lime juice
- 2 T fish sauce
- 1 T sweetener of your choice
- 1/2-1 tsp. hot pepper flakes
Directions
- Cut away the broccoli stems, then separate the tops into bite-sized florets. For a tidier prep, slice through the stem end and gently pull the floret apart instead of cutting straight through the top. If the broccoli needs a little refreshing, plunge it into cold water, then dry it well in a salad spinner or with paper towels.
- Stir the lime juice, fish sauce, sweetener, and hot pepper flakes together until you have a smooth dressing.
- Slice the red onion thinly, then chop the mint and peanuts.
- Put the dried broccoli in a bowl with the dressing and toss until the florets are evenly coated.
- Add the red onion, mint, and peanuts, toss once more, and serve.
