Ingredients
- 2 eggs
- 1/2 cup salsa verde, green chile salsa
- 2 T grated cheese
- Salt and fresh-ground black pepper to taste
Directions
- Crack the eggs into small bowls and leave them out while the salsa heats so they can lose their chill. Coat an 8″ frying pan with olive oil spray or non-stick spray.
- Pour in 1/2 cup of salsa verde and set the pan over medium heat. Cook for 4-5 minutes, until the salsa is very hot and beginning to bubble.
- Carefully slide the eggs into the salsa. Scatter the cheese over the top, turn the heat down to medium-low, cover the pan, and cook for 3-4 minutes, until the whites have set but the yolks are still soft. If you prefer firmer eggs, cook them a little more to suit you.
- As the eggs cook, warm the tortillas in the microwave or by your preferred method, if you are using them.
- Once the eggs are ready, add salt and fresh-ground black pepper, then serve them hot, with tortillas if desired.
