Ingredients
- 3 cups powdered sugar
- 3/4 cup unsweetened cocoa powder
- 1 Tbsp cornstarch
- 1/4 tsp salt
- 2 large egg whites
- 1 large egg
- 2 tsp vanilla extract
- 1 cup chocolate chips
- Maldon sea salt, for sprinkling tops, optional
Directions
- Heat the oven to 350 degrees F, and cover two baking sheets with parchment paper. In a large bowl, whisk the powdered sugar with the cocoa powder, cornstarch, and salt until the mixture looks even. Add the egg whites, egg, and vanilla extract, then stir until everything comes together. Gently fold in the chocolate chips.
- Scoop the dough in heaping tablespoonfuls onto the prepared baking sheets, leaving 2-inches between cookies so they have room to spread.
- Bake the cookies in the hot oven until they rise and develop crackly tops, about 14 minutes. Move the baking sheets to the opposite rack once while they bake.
- Take the cookies out of the oven and, if you like, give the tops a light sprinkle of Maldon sea salt. Let them rest on the baking sheet for 5 – 10 minutes, then transfer them to a wire rack to finish cooling.
