Ingredients
- 1 cup creamy peanut butter, not natural
- 1/2 cup granulated sugar
- 1/3 cup packed light-brown sugar
- 1 large egg
- 1/2 tsp baking soda
- 1 cup semi-sweet or milk chocolate chips
Directions
- Heat the oven to 350 degrees. Set out 2 baking sheets and cover them with silicone baking mats or parchment paper.
- In a mixing bowl, use a large spoon to combine the peanut butter, granulated sugar, light brown sugar, egg and baking soda until the dough looks evenly mixed.
- Fold in the chocolate chips.
- Scoop the dough into rounded tablespoonfuls, about 1 1/2 Tbsp each, and place them on the prepared baking sheets with 2-inches of space between cookies. Press each mound down just a little.
- Bake the cookies one sheet at a time in the heated oven for 10 – 12 minutes.
- Leave the cookies on the baking sheet for 5 minutes, then move them to a wire rack and let them finish cooling.
- Store the cookies in one layer in an airtight container. They are a bit fragile, so skip the bag or they may break apart.
