Ingredients
- 1 large egg
- 1 cup granular sweetener of your choice
- 1 tsp. baking powder
- 1/2 tsp. Mexican vanilla, or vanilla extract
- 1 cup creamy natural peanut butter
- 1 tsp. water
- 1/3 cup chopped peanuts, optional
Directions
- Heat the oven to 350F/180C. In a mixing bowl, beat the egg, Granulated Stevia or your chosen sweetener(s), baking powder, and vanilla with an electric beater for about a minute.
- Add the peanut butter and water, then beat again until combined. The dough may seem fairly dry, but make sure the peanut butter is thoroughly worked into the mixture.
- If you are using peanuts, add them now and mix them into the dough.
- Set out a large non-stick cookie sheet. Scoop a heaping teaspoon of dough for each cookie, shape it into a ball, and press it flat with a fork.
- Bake for 15 minutes, or a little more, until the cookies are lightly browned and feel firm. Cool the cookies well before you handle them.
