Foil Packs with Sausage, Corn, Zucchini and Potatoes

Ingredients

  • 4 fully cooked sausages, any kind, cut into 1-inch thick slices
  • 12 small potatoes, halved or quartered if large
  • 1 large red onion, cut into wedges through the root
  • 2 yellow or red bell peppers, seeded and cut into 1-inch wide strips
  • 1 zucchini, cut into 1/2-inch thick rounds
  • 1 yellow squash, cut into 1/2-inch thick rounds
  • 2 ears corn on the cob, husked and cut in half
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 4 thyme sprigs
  • 4 rosemary sprigs

Directions

  1. Heat the grill to medium high, using either a charcoal fire or a gas grill. Cut 4 pieces of heavy-duty foil into rectangles about 18x24 inches. Coat the center of each one with vegetable oil spray, or brush those spots with oil. In a large bowl, toss together the sausages, potatoes, onion, peppers, zucchini, and corn with the oil. Sprinkle in the salt and black pepper along with the dried oregano, then toss again.
  2. Portion the mixture onto the 4 sheets of foil. Set a thyme sprig and a rosemary sprig over each mound. Bring the right side of the foil over the vegetables, then pull the other side across it so the edges overlap.
  3. Fold the top and bottom edges in toward the middle. Do the same with the rest of the packets. If you are pausing here, the packets can go into the refrigerator until you are ready to grill, up to 24 hours. Flip each packet so the folded seam is underneath. Use the tip of a paring knife to make 4 or 5 small steam vents in the foil.
  4. Arrange the packets on the grill with the folded seams facing down. Shut the lid and cook for 18 to 20 minutes, shifting them once or twice while they cook so the heat is even. To check them, take a packet off the grill, turn it over, open it from the bottom, and peek inside; watch out for the steam.
  5. Turn the packets so the vented sides face up. With a sharp knife, slice a big X through the foil. Gently pull the foil back to open each packet, keeping your fingers clear because hot steam comes out right away. Serve immediately.
