Ingredients
- 1 cup granulated sugar
- 1 cup water
- 2 tablespoons freshly grated ginger root
Directions
- Slice the ginger thinly, then go back over it with your knife until the pieces are smaller and roughly chopped.
- Add the ginger to a nonreactive saucepan with the water, sugar, and salt. Bring the mixture to a boil, lower the heat so it bubbles gently, and let it simmer for 45 minutes to 1 hour.
- Allow the syrup to cool, then pour it through a fine-mesh strainer. Transfer the strained syrup to a covered container and refrigerate it until you need it. It should last for at least 2 weeks in the refrigerator.
