Ingredients
- 1 English muffin, split
- 1 egg
- 1 slice prosciutto
- 1.5 tablespoon butter
- Salt and pepper
Directions
- Warm half the butter in a small non-stick skillet set over the lowest heat possible. Crack in the egg, then angle the skillet so the egg slides to one side. Hold it that way until the underside of the white starts to firm and the egg no longer wanders around the pan.
- Season the egg with salt and pepper, then place a lid over the skillet. Let it cook for 5 or 6 minutes, just until the white turns opaque and the yolk is still very soft. If you want it over-easy, turn the egg over and cook it for 1 more minute.
- While the egg is cooking, toast the English muffin halves and spread them with the remaining butter. Arrange the prosciutto over both halves. Set the egg on one muffin half, close the sandwich with the other half, and eat it right away.
