Fried Green Tomatoes

Ingredients

  • 3 medium, firm green tomatoes
  • Salt
  • 1 cup all-purpose flour
  • 1 Tbsp Cajun seasoning, optional
  • 1/2 cup milk or buttermilk
  • 1 egg
  • 1/3 cup cornmeal
  • 1/2 cup fine dry bread crumbs
  • 1/4 cup peanut oil or extra virgin olive oil

Directions

  1. Cut the unpeeled tomatoes into 1/2 inch slices, then season the slices with salt. Leave them to sit for 5 minutes.
  2. As the tomatoes rest, arrange your coating stations in separate shallow bowls: flour with Cajun seasoning, if you are using it, buttermilk with egg, and breadcrumbs with cornmeal.
  3. Warm the peanut oil in a skillet over medium heat. Whisk the egg and buttermilk together. Coat each green tomato slice first in the flour mixture, then in the buttermilk-egg mixture, and finally in the cornmeal-breadcrumb mixture.
  4. Working with half of the coated tomato slices at a time, fry them in the skillet for 3-5 minutes per side, until browned. Transfer the fried tomatoes to paper towels so they can drain. Serve them with a little Tabasco sauce or remoulade.
