Ingredients
- 2 tablespoons melted butter
- 2 medium apples, peeled, cored and cut into 1/2 inch wedges
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 3 eggs
- 1 cup milk
- 3/4 cup all-purpose flour
- 1/8 teaspoon salt
- 3/4 teaspoon baking powder
- 3 tablespoons sugar
Directions
- Set an oven rack in the middle position and heat the oven to 350 degrees F. Add the melted butter to a pie plate and tilt it around to cover the bottom. Scatter the brown sugar and cinnamon over the butter, then lay the apple slices on top. Bake until the apples have begun to soften, about 10 minutes.
- While the apples are in the oven, whisk the eggs and milk together in a large bowl. Add the flour, salt, baking powder, and sugar, and whisk only until the batter comes together.
- Pour the batter over the warm apples. Bake for 25 to 45 minutes, depending on the size of your pan and how thick the pancake is. It should be puffed and lightly golden when it is done.
