Ingredients
- 1 cup plus 1 tablespoon unsalted butter at room temperature, divided
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/4 tablespoons poppy seeds
- 3/4 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1/3 cup plus 2 tablespoons freshly squeezed key lime juice, divided
- 2/3 cup confectioners sugar
- 1 teaspoon key lime zest
Directions
- Set the oven to 350 degrees F. Coat a loaf pan with 1 tablespoon butter. In a medium bowl, whisk the baking soda, flour, poppy seeds, and salt until evenly combined.
- Place the remaining cup of butter and the sugar in a large bowl. Beat with an electric mixer on medium speed, or use a stand mixer with the whisk attachment, until the mixture is light and airy, about 4 minutes. Add the eggs 1 at a time, mixing after each addition. Beat in the vanilla and 1/3 cup key lime juice until everything is blended. Add the flour mixture and mix only until it is incorporated.
- Pour the batter into the prepared loaf pan, smooth the surface, and bake until a cake tester comes away clean, about 50 minutes.
- Whisk the confectioners sugar with the remaining 2 tablespoons key lime juice and the key lime zest until smooth. Pour the glaze over the bread while it is warm.
