Gluten-Free Waffle BLT

Ingredients

  • For the basil-garlic mayonnaise:
  • 1/2 cup mayonnaise
  • 10 basil leaves, finely chopped
  • 1 small clove garlic, minced or put through a garlic press
  • Freshly ground pepper and salt to taste
  • For the topping:
  • 1 teaspoon olive oil
  • 8 slices bacon, preferably smoked
  • Large bunch baby lettuce leaves or several large Romaine leaves torn into small pieces
  • 2 large tomatoes, thickly sliced
  • For the waffles:
  • Dry Ingredients
  • 4 ounces white or brown rice flour
  • 2 ounces cornstarch or tapioca starch
  • 1.25 ounces sweet rice flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon rosemary, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon ground black pepper
  • Wet Ingredients
  • 1 1/4 cups milk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • Non-stick cooking spray

Directions

  1. Make the basil-garlic mayo by combining the mayonnaise with the basil and garlic in a small bowl. Add salt and pepper to your taste, then put it aside until everything is ready to assemble.
  2. Cook the bacon by warming the oil in a large skillet over high heat until it looks glossy but is not smoking. Add the bacon and cook until crisp, about 5 minutes on each side. Move the bacon to a plate lined with paper towels.
  3. For the waffles, add the white rice flour to a medium mixing bowl, then add the cornstarch, sweet rice flour, baking powder, granulated sugar, rosemary, salt, xanthan gum, and black pepper. Whisk the dry mixture well. In a separate small bowl, whisk the milk, eggs, and oil until smooth.
  4. Add the milk mixture to the flour mixture. Use a balloon whisk or a handheld mixer to blend the batter until it is completely smooth, with no lumps left behind.
  5. Warm the waffle iron as directed by the manufacturer. Coat it generously with non-stick cooking spray. Spoon batter onto the hot iron, using the amount that works for your waffle maker, and cook until the waffles are golden brown and crisp.
  6. Take the waffles out of the iron and separate them. Spread the basil-garlic mayonnaise across the waffles, then add the lettuce, tomato, and bacon. If the bacon is too long for the waffles, break the slices in half so they sit neatly on top.
