Goat Cheese Custards with Strawberries in Red Wine Syrup
Silky goat cheese custards topped with strawberries in red wine syrup make a creamy, tangy dessert with a bright fruit finish.

Ingredients
- Sugar

Directions
- Heat the oven to 350F (175C).
- Set four custard cups or ramekins inside a deep baking dish or pan.
- Combine the goat cheese, sugar, milk (or cream), egg yolks, and vanilla in a blender and blend for 30 seconds, until the mixture is completely smooth.
- Pour the custard mixture among the cups, filling each one a little over halfway.
- Pour warm tap water into the baking pan around the cups to create a water bath. The water should come roughly halfway up the outside of each cup.
- Cover the baking pan with foil, then bake the custards for 15 to 20-minutes.
- When the custards are finished baking, lift them out of the water bath and let them cool completely.
- In a non-reactive skillet, cook the red wine with the sugar until the bubbles look thick. When the mixture has cooked down to half of what you started with (1/4 cup, 60ml), take it off the heat and scrape the syrup into a bowl to cool completely.
- Rinse the strawberries, remove the hulls, and slice them. Toss the berries with the syrup, let them sit for a minute to two, then spoon them over the custards.
