Ingredients
- 1 1/2 lbs bonless skinless chicken breasts
- Olive oil
- Salt and freshly ground black pepper
- 6 Tbsp Greek vinaigrette dressing
- 4 flour tortillas
- 3/4 cup hummus, store-bought or homemade, homemade recipe in notes below
- 3 cups chopped romaine lettuce
- 2 medium roma tomatoes, diced
- 1 medium cucumber, peeled and diced
- 1/2 cup feta cheese, crumbled
Directions
- Heat a grill over medium-high until it reaches 425 degrees. Flatten the chicken to a uniform thickness with the smooth side of a meat mallet. Coat the chicken breasts lightly with about 1 Tbsp olive oil, then season them with salt and pepper.
- Oil the grill grates lightly, then cook the chicken, turning it once midway through, until an instant read thermometer inserted in the center reads 165, about 6 – 8 minutes. Move the chicken to a plate, tent it with foil, and let it sit for 10 minutes before cutting it into cubes.
- Place the diced chicken in a bowl, add the vinaigrette, and toss until the pieces are coated. For each wrap, spread about 3 Tbsp hummus on a tortilla, then add chicken, lettuce, tomatoes, cucumber and feta cheese. Fold the tortillas around the filling.
