Ingredients
- 1 homemade or store bought pizza dough
- 2 1/2 Tbsp extra virgin olive oil, divided
- 3 garlic cloves, minced
- 1/2 tsp dried oregano
- 1/4 tsp dried basil
- 1/8 tsp dried thyme
- Salt and freshly ground black pepper
- 6 oz fresh mozzarella, chopped into pieces, regular low moisture mozzarella would be fine too
- 4 oz feta, crumbled
- 1/2 cup chopped bell pepper, any variety
- 1 cup diced grape tomatoes, halved
- 1/3 cup chopped kalamata or black olives
- 1/4 cup chopped red onion
- 1 Tbsp chopped fresh parsley
Directions
- Heat the oven to 450 degrees with a pizza stone inside, and let the stone get hot for 30 minutes.
- While the oven heats, stir 1 1/2 Tbsp olive oil with the garlic in a small bowl. On lightly floured parchment paper, ease the pizza dough into a 12 – 13 inch circle, making a raised border around the edge. Brush the garlic oil over the dough. Scatter the oregano, basil, and thyme evenly over the center, leaving the rim plain, then season lightly with salt and pepper. Add the mozzarella and feta in an even layer.
- Bake for 12 – 15 minutes, until the crust turns golden. As the pizza bakes, warm 1 Tbsp olive oil in a skillet over medium high heat and sauté the peppers until tender, or skip the sauté and add them as they are.
- Take the pizza out of the oven and top it right away with the peppers, tomatoes, olives, onion, and parsley. Slice and serve.
