Ingredients
- 2 lbs of green beans, trimmed
- 1/4 cup butter
- 1 Tbsp Dijon mustard
- 1 teaspoon garlic salt
- 2 Tbsp chopped fresh thyme
- 1/3 cup slivered almonds, lightly toasted
Directions
- Bring a large pot of salted water to a boil, using 1 1/2 teaspoons salt for every quart of water. Add the green beans and cook until they are barely tender but still have a little snap, about 5 minutes.
- Drain the beans, then move them into a large bowl filled with ice water so they cool all the way through. The cold water stops the cooking and helps set that bright green color.
- Drain the beans thoroughly. You can prepare them up to this point a day ahead and refrigerate them.
- If you prefer, steam the beans for 5 minutes instead, then move straight to the skillet.
- Set a large, heavy skillet over medium high heat and melt the butter. Whisk half of the fresh thyme, 1 Tbsp, along with the Dijon mustard and garlic salt, into the melted butter.
- Add the beans to the skillet and toss them in the butter mixture until warmed through, about 4 minutes. Move the beans to a serving bowl.
- Scatter the toasted almonds over the top, along with the remaining 1 Tbsp of thyme.
