Ingredients
- 3 medium vine ripe tomatoes
- 2 small cloves garlic, minced
- 1/4 cup chopped red onion
- 2 tbsp fresh basil leaves, chopped
- 1 tbsp extra virgin oil
- 1 tbsp balsamic vinegar
- Kosher salt and fresh cracked pepper to taste
- 3 oz part skim mozzarella
- 1.25 lbs 8 thin sliced chicken cutlets
Directions
- Stir together the onion, olive oil, balsamic, 1/4 tsp kosher salt, and pepper. Let that mixture rest for a few minutes.
- Chop the tomatoes, then add them to a large bowl. Fold in the garlic, basil, the onion and balsamic mixture, another 1/8 tsp salt, and pepper to taste. Leave it alone for at least 10 minutes, or let it sit as long as overnight. Just before serving, stir in the cheese.
- Sprinkle the chicken with salt and fresh pepper.
- Heat the grill to medium-high, then clean the grates and brush them with oil so the chicken does not stick.
- Cook the chicken on the grill for 2 minutes per side. Move it to a platter, spoon the bruschetta over the top, and serve.
