Grilled Chicken with Balsamic Barbecue Sauce

Ingredients

  • 6 medium boneless, skinless chicken breasts halves, thighs would work great too
  • Salt and pepper, to taste
  • Olive Oil for brushing grill
  • 1 Recipe Balsamic Barbecue Sauce, recipe follows
  • 1/2 cup granulated sugar
  • 2 1/2 tsp cornstarch
  • 1/2 cup balsamic vinegar
  • 1/4 cup water
  • 1/4 cup apple juice
  • 1/4 cup tomato paste
  • 1 1/2 Tbsp molasses
  • 1 Tbsp low sodium soy sauce
  • 1 Tbsp Worcestershire
  • 1 tsp liquid smoke, hickory flavor
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt, or to taste
  • 1/4 tsp freshly ground black pepper

Directions

Heat the grill to medium high. Put the chicken in a ziploc bag, then use the smooth side of a meat mallet to carefully even out the thickness without smashing it to bits. Sprinkle salt and pepper over both sides of each chicken breast. Coat the grill lightly with olive oil, add the chicken, close the lid, and grill for 5 – 8 minutes on each side, until the center registers 160 degrees. During the final few minutes on the grill, brush the chicken well with Balsamic Barbecue Sauce. If you would like extra sauce alongside, set some aside in a clean container before basting, or warm any leftover sauce on the stovetop to handle any cross-contamination. Serve warm.
