Grilled halibut gets a bright garlic-lime cilantro sauce that doubles as a quick marinade and a finishing spoonful.

Ingredients
- Halibut filets or steaks, 1 per person
- 4 cloves garlic, finely minced
- 1 cup chicken stock
- 2 tsp. lime zest
- Juice of 2 limes
- 4 T olive oil
- 3 T very finely chopped fresh cilantro
Directions
- Warm a small splash of olive oil and cook the garlic in it for 2 minutes.
- Pour in the chicken stock, add the lime zest, and let the mixture simmer for about 10 minutes, until the stock has reduced a little.
- Stir in the lime juice and olive oil, then let the sauce heat through for 2-3 minutes.
- Add the cilantro and keep it on the heat for 1 minute more.
- Brush the fish with sauce on both sides, then let it marinate for 15 minutes while you heat a gas or charcoal grill to high heat. For fish, I like to coat the grill with nonstick spray before turning on the heat.
- Grill the fish until it feels firm but not hard when you press it, about 5 minutes per side.
- For pretty grill marks, place the fish diagonally across the grill slats, then pivot it after about 3 minutes of cooking on the first side.
- Serve the fish hot, with more sauce spooned over each piece.
