Ingredients
- 4 – 6 skin on or skinless salmon fillets
- Olive oil, for brushing salmon and grill
- Salt and freshly ground black pepper
- 4 oz. cream cheese, diced into small cubes
- 1/4 cup milk
- 3 Tbsp homemade or store-bought pesto, plus more for serving, I used homemade
Directions
- Heat a grill to medium-high, aiming for about 425 degrees. Coat the salmon on both sides with olive oil, using about 1 Tbsp total, then season both sides with salt and pepper. Oil the grill grates, then cook the salmon for about 3 minutes on each side, or until it is done to your liking. If your fillets have skin, place them skin side up to start.
- As the fish cooks, put the cream cheese and milk in a saucepan over medium heat. Stir constantly until the cream cheese has melted into the milk, about 1 – 2 minutes. Take the pan off the heat and mix in the pesto.
- Serve the salmon warm, topped with the creamy pesto sauce. For extra color and flavor, add about 1 tsp pesto over the sauce.
