Ingredients
- 1 tablespoon Shaoxing wine
- 1 teaspoon freshly ground black pepper
- 2 tablespoons soy sauce
- 2 tablespoons Asian fish sauce
- 2 teaspoons sugar
- 2 teaspoons granulated garlic
- 15 dried red chili peppers, roughly chopped or snipped with scissors into small pieces
- 2 pounds chicken wings
- Fresh cilantro sprigs, for garnish
- Type of fire: two-zone indirect
- Grill heat: medium-high
Directions
- In a large mixing bowl, stir together the Shaoxing wine, black pepper, soy sauce, fish sauce, sugar, granulated garlic and chili peppers until the sugar has dissolved. Add the chicken wings and toss them well so they’re evenly coated. Cover the bowl and refrigerate overnight to marinate.
- Light 1 chimney full of charcoal. Once the coals are fully lit and coated in gray ash, pour them onto 1 side of the charcoal grate. Put the cooking grate on the grill, cover it and let it heat for 5 minutes. Scrub the grate clean, then oil it.
- Remove the wings from the marinade and blot them dry. Place them over indirect heat, cover the grill and cook for 7 minutes. Flip the wings, cover again and continue cooking until they are cooked through and golden brown, about 7 minutes longer.
- Move the wings over direct heat and grill until crisp on both sides, about 1 minute per side.
- Serve right away, garnished with cilantro.
