Ingredients
- 2 lb flank or london broil steak
- Kosher salt and fresh pepper
- Garlic powder
- 1 tbsp extra virgin olive oil
- 2 tbsp balsamic
- 1/3 cup red onion, chopped
- 3-4 to matoes
- 1 tbsp fresh herbs such as oregano, basil or parsley
Directions
- Prick the steak all over with a fork. Sprinkle it generously with salt, pepper and garlic powder, then leave it at room temperature for about 10 minutes.
- In a large bowl, stir together the onions, olive oil, balsamic, salt and pepper. Allow the onions to hang out briefly in the salted balsamic mixture so their bite softens a little. Add the tomatoes and fresh herbs, then taste and adjust the seasoning if it needs it.
- Get your grill or broiler very hot. Cook the steak for about 7 minutes per side for medium rare, or continue cooking longer if you prefer it more done. Transfer it to a plate and rest it for about 5 minutes before cutting.
- Cut the steak into thin diagonal slices, spoon the tomato mixture over the top, and serve.
