Grilled Stuffed Jalape&ntildeos

  • Garlic
  • Pepper
  • Cilantro
  • Bacon
  • Cooking spray

Directions

  1. Heat the grill to medium-high heat.
  2. Set a skillet over medium heat and cook the bacon until it is crisp. Take the bacon out of the pan and let it drain on paper towels, then crumble it. In a bowl, stir together the crumbled bacon, cheeses, and the next 4 ingredients, ending with the garlic, until everything is evenly mixed. Spoon the cheese mixture into the pepper halves, dividing it evenly. Coat the grill rack or grill grate with cooking spray, then arrange the peppers on it with the cheese facing up. Cover the grill and cook the peppers for 8 minutes, until the undersides are charred and the filling is lightly browned. Transfer the peppers to a serving platter. Finish with cilantro and tomato.
