Hawaiian BBQ Chicken Pizza

Ingredients

  • 1 lb pizza dough, homemade or store bought
  • 12 oz boneless skinless chicken breasts
  • 2 Tbsp olive oil, divided
  • 3/4 cup barbecue sauce, divided
  • 4 slices bacon, cooked and chopped
  • 2 cups low-moisture mozzarella, shredded
  • 1 cup chopped fresh pineapple
  • 1/3 of a medium red onion, sliced thin and run under cool water to remove harsh bite
  • 1/4 cup cilantro, chopped or torn
  • 1 cloves garlic, minced
  • Freshly ground black pepper

Directions

  1. Heat the oven to 475 degrees F, and bring a grill to medium-high heat. Coat the chicken on both sides with 1 Tbsp of the olive oil, then season both sides with salt and pepper. Grill the chicken until it is cooked through, turning it once midway; during the final 1 – 2 minutes, brush on 3 Tbsp of the barbecue sauce. Transfer it off the grill and let it cool for 5 minutes.
  2. Stretch the pizza dough on a floured piece of parchment set over a pizza tray, shaping it into a 12-inch round. In a mixing bowl, whisk the garlic with the remaining olive oil. Brush this mixture over the full surface of the dough, then leave it alone for 10 minutes.
  3. Cut the chicken into cubes. Spread the remaining barbecue sauce, 1/2 cup + 1 Tbsp, over the dough. Scatter on 1/3 of the mozzarella, followed by the chicken, pineapple, bacon and red onion. Add the remaining mozzarella over everything and finish with freshly ground black pepper.
  4. Bake until the crust turns golden, about 11 – 13 minutes. Cut into slices and serve warm with the cilantro on top.
