Healthier Brownies

Ingredients

  • 1 cup + 2 Tbsp super fine almond flour
  • 1/2 cup unsweetened cocoa powder, spoon and level
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 cup pitted Medjool dates
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup mini semi-sweet chocolate chips, optional

Directions

  1. Heat the oven to 350 degrees F. Rub coconut oil over an 8 by 8 inch baking dish; if you’d like to lift the brownies out more easily later, parchment works well too.
  2. In a food processor, combine the almond flour, cocoa powder, salt, baking powder, dates, honey, coconut oil, and vanilla. Run the machine until the mixture is evenly combined and the dates are broken down very finely, about 1 minute.
  3. Add the first egg and pulse about 15 times, or just until it disappears into the batter. Do the same with the remaining egg. Use a rubber spatula to fold in the chocolate chips.
  4. Transfer the batter to the prepared pan and smooth it into an even layer. Bake until the brownies are set; a toothpick should come out with moist crumbs, about 20 – 25 minutes.
  5. Cool the brownies for about 5 minutes before slicing and serving. After they have cooled, store them in an airtight container.
  6. For the optional chocolate syrup, place 1 Tbsp coconut oil and 1 Tbsp honey in a microwave-safe bowl and warm until the coconut oil has melted. Stir in the cocoa, then allow it to cool slightly so it thickens.
