Ingredients
- 2 1/2 tablespoons peanut oil
- 1 package firm tofu
- 1 red onion, halved and sliced
- 1 red bell pepper, sliced
- 1 green jalapeño pepper, seeded and chopped
- 3 cloves garlic, crushed
- 1/3 cup hot water
- 3 tablespoons white vinegar
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 1/2 teaspoon crushed red pepper flakes
- Rice, for serving
Directions
- Drain the tofu, set it on a dry surface, and put 2 or 3 dinner plates on top to press it for one hour, pouring off liquid every few minutes. When the time is up, cut the tofu into 1/2-inch cubes.
- Warm the peanut oil in a wok or large frying pan set over medium-high heat. Add the tofu and cook it, turning as needed, until the cubes are browned on every side.
- Add the onion, bell pepper, jalapeno, and garlic to the pan. Cook until the vegetables are just tender, about 5 minutes.
- In a small bowl, whisk the hot water, vinegar, soy sauce, honey, brown sugar, cornstarch, and red pepper flakes until combined. Pour the sauce over the tofu and vegetables, toss everything together, and let it simmer for 3 to 5 minutes, until the sauce has thickened a bit. Serve with rice.
