Healthy and Hearty Southwestern Chicken Soup

As the weather gets chillier, there’s nothing more delicious than a warm, hearty soup recipe! This delicious dish is somewhere between a soup and a stew — it’s easily hearty enough to work as a full meal, and it’s full of nutritious and substantial ingredients like beans and chicken.

I bet you wouldn’t think of beans as a skin-friendly ingredient, but actually they are! Beans are full of biotin, which helps your skin look younger and healthier (a bioltin deficiency can make your skin dry and brittle). And this recipe also has tomatoes, which naturally protect your skin from UV rays (but be sure to add some extra protection with a moisturizer containing SPF, like Simple Skincare Protecting Light Moisturizer)! All in all, this recipe is delicious and easy, and will leave your skin looking great!

Southwestern Chicken Soup

1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 12-ounce bottle of beer
2 (10 ounce) cans diced tomatoes
2 tbsp jalapeno peppers, minced
1/4 cup taco seasoning
3 whole skinless, boneless chicken breasts
Cheddar cheese (optional)
Sour cream (optional)

1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired. Serves four.

    I made a quick version of this recipe last night. None left even though I doubled the recipe so I could maybe serve to more than one night… oh well… Here’s what I did differently: I sautéed onion, garlic and green pepper in extra-virgin olive oil in bottom of pot. I doubled the recipe but substituted diced tomatoes for Rotel tomatoes ( has green chilis) and diced tomatoes with green pepper. Then my pintos already had jalapenos
    in them. I added an extra-large pre- roasted chicken from the grocery store which I shredded as I added it, and a few red pepper flakes. Then I added sliced avocados and sliced black olives as topping options as well as the tortilla chips, cheese and sour cream. I let it simmer for a bit over an hour before serving.
