Ingredients
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 3/4 cup tightly packed light brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 5 tablespoons unsalted butter, cold, cubed
- 1/4 cup honey
- 1/4 cup milk
- 1 tablespoon vanilla extract
Directions
- Heat the oven to 350 degrees F. Add the flours, sugar, baking soda, and salt to a food processor, then pulse until everything is evenly combined. Drop in the cold butter and pulse until the mixture still has pea-sized bits of butter, about 1-2 minutes.
- In a separate bowl, whisk the honey, milk, and vanilla together. With the food processor running, pour the liquid mixture in slowly; after a minute or two, the dough should gather into a ball.
- Roll the dough into a rough rectangle that is 1/8" thick. Use a sharp knife to mark it into 3" squares, or whatever shapes you want.
- Transfer the dough to a baking sheet lined with parchment or a silicone mat. Bake for 15-18 minutes, until the crackers feel dry on top and have turned golden brown. Take the pan out of the oven and go over the scored lines again, then leave the crackers on the baking sheet until completely cool.
- Snap or slice the crackers apart along the marks and store them airtight for up to 1 week.
