Homemade Pancake Mix

Ingredients

  • 7 3/4 cups all-purpose flour
  • 1 3/4 cups dry non-fat milk powder
  • 1/2 cup granulated sugar
  • 1/3 cup baking powder
  • 1 1/2 Tbsp salt
  • 1 – 1 1/3 cups water
  • 3 Tbsp vegetable oil or melted butter
  • 1 large egg

Directions

  1. To make the mix, combine the flour, dry milk, sugar, baking powder and salt in a large mixing bowl, then whisk for about 1 1/2 minutes so the ingredients are evenly blended. Transfer the mixture to an airtight container and store for 8 months, or less if any of your ingredients expire sooner.
  2. To make the pancakes, heat an electric griddle to 400 degrees. In a large mixing bowl, whisk the water, oil and egg until smooth and well combined.
  3. Add 2 cups (10 oz) of the pancake mix and whisk just until the batter comes together. It should look a little lumpy, so resist the urge to keep stirring.
  4. Scoop the batter onto the griddle in 1/3 cup portions, buttering the griddle first if needed. If the batter sits thickly, nudge it outward a bit.
  5. Cook the pancakes until the undersides are golden brown, then turn them over and cook the second side until golden brown as well. Serve right away with butter and maple syrup.
