Homemade Preserved Horseradish
Fresh horseradish blended with vinegar and salt makes a bracing, punchy condiment for meats, sandwiches, and sauces.

Ingredients
- Salt
- Water
Directions
Using a food processor or blender, blitz the horseradish until it is broken into fine shreds. Pour in enough vinegar to just cover it, then add salt to taste. If the bite is harsher than you want, stir in water 1 tablespoon at a time until it mellows slightly, while still tasting very strong and pungent. Transfer to an airtight container and refrigerate for up to 3 weeks.
