Ingredients
- 1-2 lbs. carrots
- 2 Tbsp olive oil
- 1/4 tsp each salt & pepper
- 2 Tbsp honey
- 1/4 cup balsamic vinegar
- 1 Tbsp butter
Directions
- Heat the oven to 400 degrees. Clean the carrots, peel them, and cut them into 1-inch pieces, using a diagonal cut if you want them a little prettier.
- Line a baking sheet with foil. Spread the carrots on it, pour the olive oil over them, and season with the salt and pepper. Give everything a good toss so the carrots are coated.
- Roast the carrots for 40 minutes, stirring them 1 time halfway through.
- In the last 10 minutes that the carrots are in the oven, make the glaze. Add the balsamic vinegar and honey to a small pot, then simmer over medium heat for approximately 10 minutes, until the mixture has thickened.
- After the glaze thickens, take it off the heat and stir in the butter until it melts.
- When the carrots are done roasting, spoon the honey balsamic glaze over them and toss until coated. Serve warm.
