Honey Glazed Salmon with Citrus Avocado Salsa

Ingredients

  • 4 skinless salmon fillets
  • 8 tsp honey, divided
  • 8 tsp flour, divided
  • 2 Tbsp olive oil
  • Fine sea salt and freshly ground black pepper
  • 1 large hass avocado, peeled, cored and diced
  • 1/3 cup chopped red onion
  • 1 tsp orange zest
  • 2 small navel oranges, peeled, segmented and diced
  • 1 tsp lime zest
  • 2 Tbsp lime juice
  • 1 cloves garlic, minced
  • 3 Tbsp cilantro, chopped

Directions

  1. Heat the oven to 350 degrees. Take 2 salmon fillets at a time and season the top sides with salt and pepper. Spoon 1 tsp honey over each fillet and rub it across the surface, then add 1 tsp flour to each top and smooth it over.
  2. Warm a large skillet over medium-high heat. Pour in 1 Tbsp olive oil, and when it is hot, place 2 salmon fillets in the pan. Cook until the undersides are nicely browned, about 2 minutes. As they cook, season the exposed sides with salt and pepper, then coat each one with 1 tsp honey and 1 tsp flour.
  3. Turn the salmon carefully and brown the second side, about 2 minutes longer. Do the same with the remaining 2 fillets.
  4. Coat a baking sheet lightly with non-stick cooking spray, then move the salmon onto the sheet. Bake in the heated oven until the fillets are cooked through, about 7 – 10 minutes longer, depending on how thick the salmon is. Serve warm with the citrus avocado salsa.
  5. For the salsa, place all ingredients in a medium bowl and fold them together gently, adding salt and pepper to taste.
  6. This can also be prepared without the oranges: leave out the oranges and orange zest, use 2 avocados, and increase the lime zest to 2 tsp.
