Ingredients
- 2 lbs. bone-in, skin-on chicken thighs
- Pinch salt and pepper
- 2 Tbsp vegetable oil
- 1/3 cup hoisin sauce
- 1/3 cup soy sauce
- 1/3 cup honey
- 2 Tbsp hot water
- 1 tsp minced ginger
- 4 cloves garlic, minced
- Sesame seeds for garnish, optional
- 1/4 cup fresh cilantro for garnish, optional
Directions
- Sprinkle the chicken on both sides with salt and pepper. Warm a large skillet over medium-high heat, add the vegetable oil, and tilt the pan so the oil covers the bottom. Place the chicken in the pan with the skin side down and cook until it turns deeply golden, about 5-6 minutes. Turn the pieces over and cook for 2 minutes more, then move the chicken into the slow cooker.
- Whisk the hoisin sauce with the soy sauce in a medium bowl, then mix in the honey, water, ginger, and garlic. Pour that sauce evenly over the chicken in the slow cooker.
- Put the lid on and cook on high for 3-4 hours, or use low for 5-6 hours. Turn the chicken over at the halfway point so every piece gets plenty of time in the sauce.
- For serving, pile the chicken over rice, spoon the sauce from the slow cooker on top, and finish with sesame seeds and cilantro, if you’d like.
