Ingredients
- 1 lb raw almonds
- 3 Tbsp honey
- 1 1/2 Tbsp coconut oil, melted
- 1/8 tsp sea salt, then more to taste
Directions
- Heat the oven to 350 degrees F. In a small mixing bowl, whisk the melted coconut oil with 3 Tbsp honey and 1/8 tsp salt until the mixture looks smooth and combined.
- Put the almonds in a mixing bowl, drizzle the honey mixture over them, and toss until they are coated all over. Spread the almonds in an even layer on a baking sheet lined with a silicone liner, using a spatula to get any extra honey mixture out of the bowl and onto the almonds.
- Bake the almonds in the hot oven for 14 – 15 minutes, until they are nicely roasted, giving them a toss 1 time halfway through. Let them cool completely, about 20 minutes.
- Transfer the almonds, along with any honey mixture left on the baking mat, to a food processor. Pulse until the nuts become butter, stopping every few minutes to scrape the sides and bottom of the processor bowl; depending on your food processor, this can take 8 – 20 minutes. Toward the end, if you want it sweeter, add up to 1 Tbsp honey, plus another 1 or 2 pinches of salt if you like. Store in an airtight container in the refrigerator.
