Ingredients
- 3 lbs carrots, peeled and sliced on a bias to 1 1/2-inch long pieces, slice thicker portions into halves
- 3 Tbsp olive oil
- Salt and freshly ground black pepper
- 3 Tbsp honey
- 1 1/2 Tbsp apple cider vinegar
- 2 1/2 Tbsp chopped fresh parsley
- 1 Tbsp fresh thyme leaves
Directions
- Heat your oven to 400 degrees. Pile the carrots onto a rimmed 17 by 12-inch baking sheet. Add the olive oil, sprinkle on salt and pepper, and toss until the carrots are nicely coated. Arrange them in a single, even layer.
- Slide the pan into the hot oven and roast for 20 minutes, then take it out.
- While the carrots roast, mix the honey and apple cider vinegar together in a small bowl. Pour that mixture over the carrots, then toss everything well so the glaze reaches every piece.
- Put the pan back in the oven and continue roasting for about 10 to 20 minutes longer. Take the carrots out, give them one more toss, and finish with the fresh parsley and thyme. Serve warm.
- Thicker carrots work best here. If your carrots are thin, shorten the roasting time as needed.
