Ingredients
- 1 cup whole wheat flour
- 1 1/2-2 cups all purpose flour, divided
- 1 cup water
- 2 Tbsp honey
- 2 tsp yeast
- 3 Tbsp olive oil
- 1 1/2 tsp salt
Directions
- In a small bowl, combine the warm water, honey, and yeast, stirring to mix. Set it aside for 3-5 minutes, until the surface looks very foamy.
- Mix the olive oil and salt into the yeast mixture. Add 1 cup of whole wheat flour and stir until the batter looks smooth and evenly combined. Begin adding the all purpose flour in 1/2 cup portions, stirring after each addition, until the dough becomes too firm to manage with a spoon.
- Move the dough onto a floured work surface. Knead in more all purpose flour as needed, working the dough until it feels soft and elastic but no longer sticky, about 3-5 minutes. Depending on the moisture in your flour, you should use a total of 1-2 cups of all purpose flour.
- Coat a large bowl with nonstick spray, then set the dough in the bowl. Cover it loosely with plastic wrap and leave it to rise for about 45 minutes, or until it has doubled.
- For shaping, take the risen dough out of the bowl and set it on a floured surface. Flatten it into a wide round with your hands. Lift the dough and move it to a pizza pan that has been coated with nonstick spray or dusted with corn meal. Press it outward until it stretches to the edges of the pan. If you prefer, you can lift the dough and stretch it over your fists, though that method takes a little practice.
- Add your toppings, then bake the pizza in a thoroughly preheated 450 degree oven for about 15 minutes, until the crust is golden around the edges.
