Ingredients
- 1 1/2 pounds baby red or gold potatoes
- 1 to 2 tablespoons chopped fresh chives or parsley
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Extra fresh chopped herbs, to garnish
- Sea salt, to garnish
Directions
- Get the potatoes ready: Any potatoes under 3/4-inch across can stay whole. Cut the bigger ones in halves or quarters, aiming for pieces about 1-inch.
- Warm the water: Add water to a pot and set your immersion circulator in place. Set it to 194 degrees F and wait until the bath reaches that temperature.
- Season the potatoes: Put the potatoes, chives, salt, black pepper, and oil into a gallon-size zip-top freezer bag. Gently toss everything right in the bag so the seasoning and oil are evenly spread around.
- Add 3 or 4 heavy soup spoons to the bag. Potatoes like to bob around, and the spoons help keep the bag from floating.
- Close the bag: Use the water-displacement method so there is as little air inside as possible. Slowly lower the bag of potatoes into the water, letting the water pressure push the air up and out through the open top. When the opening is just at the water line and the air has been forced out, zip the bag closed.
- Rest the sealed bag on a kitchen towel while the water finishes heating.
- Cook the potatoes: When the water is at temperature, lower the bag into the pot. Check that the entire bag is underwater, since exposed potatoes will not cook evenly.
- Cook for 1 hour. To check them, carefully lift the bag from the water, open it, and pierce a potato with a fork to see if it is tender. If it is not tender all the way through, close the bag again and keep cooking.
- To serve, take the bag out of the water and turn off the circulator. Move the potatoes to a serving platter and, if you like, finish them with extra chopped fresh herbs and sea salt. The oil from the bag can be spooned over the plated potatoes too.
- Or, cool the potatoes in the bag and refrigerate them for 3 to 4 days. When you are ready, take them out of the bag and warm them in the microwave, in a skillet over medium-high heat, or in a 425 degrees F oven.
