Ingredients
- 1 recipe pizza dough
- 1/2 recipe hummus, any flavor
- 1 small zucchini
- 1 small summer squash
- 1 medium portabello mushroom cap
- 1/2 small red onion
- 1/3 of 12 oz. jar roasted red peppers
- 2 Tbsp olive oil
- To taste salt and pepper
- 1/2 tsp crushed red pepper, optional
- 1 Tbsp cornmeal
Directions
- Prepare and knead the pizza dough, then set the dough ball in a bowl. Cover it loosely and put it somewhere warm to rise for 1 hour.
- As the dough rises, make the hummus. Stir in enough liquid to make it easy to smooth on with a spoon, then refrigerate it until you need it.
- Rinse the vegetables well. Cut the squash and onion into 1/2 inch slices. Put the squash in a bowl, add 2 Tbsp olive oil, season with salt and pepper, and toss until coated. Heat a counter top grill, then cook the squash for about 5 minutes. Use the portabello cap and onion pieces to pick up the extra oil left in the bowl, then grill them the same way. When the vegetables are done, chop them into bite sized pieces. Slice 1 roasted red pepper from the jar into strips.
- When the dough has puffed to about double its starting size, about 1 hour, start heating the oven to 450 degrees. Coat a pizza pan with non-stick spray and scatter cornmeal generously over it.
- Press the air out of the dough. With floured hands, stretch it into a 16 inch circle. Spoon about 1/2 of the batch of hummus onto the dough and spread it with the back of the spoon. Arrange the grilled vegetables over the top.
- Bake the pizza for 20-25 minutes, until the outer rim of the crust turns golden brown. Slice into 8 pieces.
