Ingredients
- 1 pound dried cannellini beans, soaked overnight and drained
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 bay leaf
- 3 cups vegetable broth or water
- Salt and freshly ground black pepper to taste
Directions
- Set the Instant Pot to sauté. Pour in the olive oil, then add the onion, celery, carrots, garlic, oregano, thyme and bay leaf. Cook for 5 minutes, stirring now and then, until the vegetables have softened.
- Add the drained beans, followed by the vegetable broth or water, and stir everything together.
- Lock the lid in place and cook on manual high pressure for 25 minutes. When the cooking cycle ends, let the pressure come down naturally for 10 minutes, then manually vent whatever pressure remains.
- Open the pot carefully, discard the lid, and season the beans with salt and freshly ground black pepper to taste. Serve warm with your favorite accompaniments.
