Ingredients
- 1 pork tenderloin
- 1 tsp salt
- 1 tsp ground cumin
- 3/4 tsp chili powder
- 1/2 tsp cinnamon
- 1/2 tsp freshly ground black pepper
- 1/4 tsp paprika
- 1 Tbsp olive oil
- 6 Tbsp packed brown sugar, light or dark
- 1 Tbsp finely minced garlic
- 1 1/2 tsp Sriracha or Tabasco sauce
Directions
- Set the oven to 350 degrees. Combine the salt, chili powder, cumin, cinnamon, black pepper and paprika in a small bowl, then work that spice mixture all over the pork tenderloin.
- Warm the olive oil in a 12-inch heavy skillet over medium-high heat. When the oil is just starting to smoke, add the pork and sear it for 2 – 3 minutes, until the underside is browned. Turn it over and brown the other side as well, about 2 – 3 minutes.
- Mix the brown sugar, minced garlic and hot sauce together in a small bowl. Spoon and spread that mixture across the top of the seared pork. Move the pork, still in the oven safe skillet, to the middle of the oven and roast until an instant read thermometer inserted into the center reads 140 degrees, about 20 – 30 minutes.
- Leave the pork in the skillet to rest at room temperature for 10 minutes, tented loosely with aluminum foil. The internal temperature should rise to 155 degrees as it sits. Slice and serve warm.
