Ingredients
- 28 ounces freshly ground beef
- Kosher salt and freshly ground black pepper
- 4 slices cheese
- 4 soft hamburger buns, lightly toasted
- Toppings and condiments as desired
Directions
- Set your broiler to high. Divide the meat into 4 equal 7-ounce portions, then gently form each portion into a patty 4.5-inches wide and about 3/4-inch thick. Lay the patties on a flat surface, and press the middle of each one down with 3 or 4 fingers to make a dimple. You want that indentation to be about 1/4 of an inch deep and 3 inches across. Season the patties generously with salt and pepper.
- Arrange the patties on a foil-lined broiler pan, setting the pan so the tops of the burgers sit 2 1/2 to 3 inches from the broiler elements or flame. Broil for 3 minutes, until the tops are deeply browned and just starting to char. Turn the patties over and keep broiling until an instant read thermometer registers 130 degrees in the center for medium-rare, about 3 minutes longer. Cook for a little more or less time if you prefer them more or less done.
- Lay a slice of cheese on each patty, then slide the pan back under the broiler for 25 seconds so the cheese melts. Transfer the burgers to the buns, add whatever toppings you like, and serve.
