Ingredients
- 1 head of cauliflower, cut into florets
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 3/4 cup cold water
- Salt and pepper to taste
- Oil for frying
Directions
- Warm the oil in a large skillet set over medium-high heat.
- In a shallow bowl, stir together the all-purpose flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly combined.
- Add the cauliflower florets to the dry mixture one at a time, turning each piece so it gets coated all over.
- Gently lower the coated cauliflower into the hot oil. Fry for about 5 minutes, until the pieces are crisp and golden brown. Lift them out of the oil and transfer them to a paper towel lined plate so the extra oil can drain away.
- In another bowl, whisk the cold water with the remaining cornstarch until the mixture is smooth. Pour it slowly into the hot oil, stirring the whole time with a wooden spoon or spatula, until it thickens, about 1 minute. This gives the fried cauliflower its crisp coating.
- When all the cauliflower has been fried and coated in the sauce, serve it right away with your favorite dipping sauce.
