Lean and Mean Dry Rub for Pulled Pork

Ingredients

  • 1/3 cup whole black peppercorns, coarsely ground
  • 1/3 cup packed dark brown sugar
  • 2 tablespoons sweet paprika
  • 2 tablespoons whole coriander seed, ground
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper

Directions

Add all the ingredients to a small bowl and mix until the spices and sugar are evenly blended. If the brown sugar has little lumps, pinch them apart with your fingertips; a glove is a good idea for that part. Use the rub right away as needed, or transfer it to an airtight container and keep it at room temperature for up to 5 days.
