Ingredients
- 1 slice pie from an 8-or 9-inch pie
- 8 ounces ice cream, softened and divided in half
- 1/4 cup crushed cookies or graham crackers
- Caramel, hot fudge, or butterscotch sauce, to taste
Directions
- Slice the pie down the middle lengthwise. Roughly chop both pieces until the chunks are about 1/2-inch in size. You’ll use one small pile for each parfait.
- Take about 1/3 of the chopped pie from each half and spread it across the bottom of each parfait glass or cup.
- Spoon 2 tablespoons of ice cream over the pie pieces in each cup. Scatter a thin layer of crushed cookies or graham crackers over the ice cream in each parfait, then add a few pie crumbles on top.
- Divide the remaining ice cream between the parfaits. If you’d like, spoon on a layer of caramel sauce, hot fudge, or butterscotch sauce, then finish with a few more pie crumbles over the sauce.
- Transfer the parfaits to the freezer for about an hour so they can firm up before serving.
