Leftover Turkey Shepherd's Pie Casserole with Garlic-Parmesan Cauliflower Topping

Ingredients

  • 1 onion, chopped in pieces about 1/2 inch
  • 2 tsp. olive oil
  • 2 tsp. poultry seasoning
  • 1 cup raw carrots, diced into 1/4 inch pieces
  • 1 cup frozen peas
  • 3 cups diced leftover turkey or chicken, cut into pieces about 1 inch square
  • 1 3/4 cups turkey gravy
  • 1/2 cup grated cheese blend
  • 1 medium-sized head of cauliflower, cut into small pieces
  • 3-4 large cloves garlic
  • 2 T low-fat or skim milk
  • 1/3 cup finely grated Parmesan
  • Salt and fresh-ground black pepper to taste

Directions

  1. Set the oven to 375F/190C. Fill a medium-sized pot with salted water and bring it to a boil. Cut the cauliflower small, add it to the pot with the garlic cloves, and let everything simmer until the cauliflower is tender enough to mash without a fight.
  2. Pour off the water from the cauliflower, taking care to drain it very well. Blend or beat the cauliflower with the milk and Parmesan, using an immersion blender, food processor, or hand beater. Add salt and fresh-ground black pepper until it tastes right to you.
  3. As the cauliflower is cooking, warm the olive oil in a large frying pan. Add the onion and cook for 3-4 minutes, then stir in the Poultry Seasoning and cook for about 1 minute longer.
  4. Place the carrots in a glass measuring cup, cover them with cling-wrap, and cook them in the microwave for about 3 minutes, stopping when they are only beginning to soften.
  5. Stir the carrots into the pan, then add the diced turkey, peas, and turkey gravy. Turn the heat to low and let the mixture simmer for 10 minutes, until the gravy has thickened a bit.
  6. Coat an 8″ x 8″ casserole dish with non-stick spray. Use one with sides that are on the taller side. Spoon the turkey and vegetable filling into the dish and spread it evenly across the bottom.
  7. Add the cauliflower mixture over the filling, smoothing it with a rubber scraper so the surface is covered. Scatter the grated cheese over the top.
  8. Bake for 30 minutes, until you can see the casserole bubbling and the top has taken on a little color. Serve hot.
