Prep 10 min · Makes 4 servings

Ingredients
- 8 large hard boiled eggs
- 1/3 cup mayonnaise
- 2 Tbsp lemon juice
- 1 Tbsp dijon mustard
- 1-1 1/2 tsp fresh or dried herbs
- 1/2 tsp salt
- 10-15 cranks fresh cracked pepper
Directions
- Remove the shells from the hard boiled eggs, then cut them into rough 1/2-inch pieces.
- In a medium bowl, make the dressing by stirring together the mayonnaise, lemon juice, dijon mustard, salt, and pepper until everything looks smooth and combined.
- Give the herbs a rough chop, then stir them into the dressing. Start with about 1 teaspoon, taste, and add more if you want a stronger herb flavor. Keep in mind that the herbs will stand out more after the salad has been chilled.
- Fold the chopped eggs into the dressing until they’re evenly coated. You can chill the egg salad until you’re ready to eat, or serve it right away. Spoon it into a sandwich, pile it over lettuce, or scoop it up with your favorite crackers.
