Lisa's Cross-Cultural Salsa with Tomato, Avocado, Lime, and Feta

Ingredients

  • 1 large lime, zest and juice
  • 1 avocado, diced
  • 1 cup diced fresh tomatoes
  • 1/4 cup finely diced red onion
  • 1/3 – 1/2 cup crumbled Feta
  • Salt and fresh ground black pepper to taste

Directions

  1. Remove the zest from the lime, then squeeze out the juice. Add both to a mixing bowl with enough room for the finished salsa.
  2. Add the diced avocado to the bowl, and turn it gently through the lime zest and juice.
  3. Chop the fresh tomatoes until you have 1 cup diced tomatoes.
  4. Mince the red onion finely, and crumble the Feta.
  5. Add the tomatoes and red onion to the avocado mixture, stirring until everything is evenly combined.
  6. Add the crumbled Feta last, folding it in just until it is distributed through the salsa. Be gentle here so the mixture stays chunky.
  7. Taste, then add salt and fresh ground black pepper as needed, and serve.
  8. Spoon it onto roasted or grilled fish, chicken cooked on the grill or in a skillet, pork chops prepared either way, or steak.
  9. You can also use it for tacos, tuck it into burritos, or scoop it up with chips or toasted pita chips.
