Ingredients
- 1 lb. ground beef
- 1 lb ground turkey breakfast sausage or ground turkey
- 1 onion, diced very small
- 1 T garlic puree
- 1/2 tsp. Veg-Sal or 1/4 tsp. salt
- 1/4 tsp. white pepper
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cardamom
- 1/2 tsp. ground allspice
- 1/4 tsp. ground cinnamon
Directions
- Heat the oven to 400 F. Place the meat in a mixing bowl so it can lose its chill while you chop the onion very finely. A Cuisinart Food Processor works nicely here if you want quick, even pieces.
- Once the meat has come to room temperature, add the onion, garlic, Veg-Sal, pepper, ginger, cardamom, allspice, and cinnamon. Use clean hands to combine everything only until the meats and seasonings are evenly mixed; stop before the mixture gets overworked.
- Coat the pan or grilling rack lightly with olive oil or non-stick spray. Baking the meatballs on a wire rack set over a baking sheet helps them cook more uniformly, and any liquid that comes out can drip below instead of pooling around them. That matters even more if you are using ground turkey.
- Scoop the meat with a tablespoon-sized measuring spoon, then roll it between your hands into small meatballs. Set each one on the rack as you shape it.
- Bake the meatballs until they are cooked all the way through and lightly browned, 20-30 minutes. Serve hot.
